Very Berry Chocolate Chunk Muffins

Ingredients:

Instructions:

  1. Preheat oven to 425 degrees F. and line 2 muffin tins with 18 muffin cups.
  2. In a large bowl, whisk together the brown sugar, sugar, banana, non-dairy milk, oil, maple syrup and applesauce.
  3. Combine the dry ingredients in a separate bowl.
  4. Add the berries to the dry ingredients and toss to combine.
  5. Add the berry / flour mixture to the wet ingredients and fold together just until combined. The mixture will still be a little chunky. Fold in the chocolate chunks.
  6. Fill the muffin cups about 3/4 of the way full.
  7. Bake at 425 degrees F. for 5 minutes. Without opening the oven, reduce the heat to 350 degrees F. and bake for another 15-20 minutes or until a toothpick comes out clean.*
