Very Berry Chocolate Chunk Muffins
Ingredients:
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1 mashed banana
- 1/2 cup oat milk or other non-dairy milk
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
- 1/2 cup applesauce
- 2 cups gluten-free all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 3/4 cup mixed berries*
- 3/4 cup vegan dark chocolate chunks*
Instructions:
- Preheat oven to 425 degrees F. and line 2 muffin tins with 18 muffin cups.
- In a large bowl, whisk together the brown sugar, sugar, banana, non-dairy milk, oil, maple syrup and applesauce.
- Combine the dry ingredients in a separate bowl.
- Add the berries to the dry ingredients and toss to combine.
- Add the berry / flour mixture to the wet ingredients and fold together just until combined. The mixture will still be a little chunky. Fold in the chocolate chunks.
- Fill the muffin cups about 3/4 of the way full.
- Bake at 425 degrees F. for 5 minutes. Without opening the oven, reduce the heat to 350 degrees F. and bake for another 15-20 minutes or until a toothpick comes out clean.*
