Waffles with Cherry Compote
Ingredients:
- Waffles!
- 1 1/2 cups flour
- 1/3 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 large egg
- 1 cup milk
- 1/2 cup buttermilk
- 2 teaspoons almond extract
- 2 Tablespoons butter, melted and cooled, plus more for brushing the waffle iron (you could also use cooking spray)
- 1/4 cup shortening, melted and cooled
- Cherry Compote
- 1 lb cherries, washed, pitted and halved
- 3/4 cup water
- 1/2 cup sugar
- 1 Tablespoon flour or cornstarch
Instructions:
- Waffles:
- Whisk together the flour, sugar, salt, baking powder, and baking soda in a large bowl and set aside.
- Whisk together the egg, milk, buttermilk, almond extract, melted butter, and melted shortening in another bowl. Add the wet ingredients to the dry and combine with a whisk. It is ok if the batter is a little lumpy.
- Preheat a waffle iron and brush with melted butter or spray with cooking spray. Ladle enough batter to coat the whole waffle iron and cook until golden brown. My waffle iron tells me when it is finished, but it should be fairly easy to tell if yours doesn't do that. Serve with whipped cream and cherry compote! Do yourself a favour and make homemade whipped cream too because it is so much better than the storebought stuff!
- Cherry Compote:
- In a medium saucepan, combine the cherries, water, and sugar. Bring to a boil, reduce the heat to medium-low, and simmer for 15 minutes, stirring occasionally.
- Combine the flour or cornstarch with 1 Tablespoon of water in a small glass and add to the cherry mixture, stirring quickly with a whisk so that it does not clump. Return the mixture to a boil and cook for 1 minutes. Reduce the heat again and simmer for about 5 minutes until you have a thickened compote (similar to a cherry pie fill). Serve over waffles!
