Walnut Slice
Ingredients:
For the crust
- 1 cup all-purpose flour
- 1/2 cup salted butter, softened to room temperature
- 2 tablespoons light brown sugar
For the topping
- 2 eggs
- 1 cup light brown sugar
- 1 cup chopped walnuts*
- 1 cup flaked coconut*
- 2 tablespoons all-purpose flour
- 1/2 teaspoon baking powder
Instructions:
- Preheat the oven to 325 degrees F. Line a 8x8 inch baking pan with foil and give it a quick grease with cooking spray.
- Make the crust. Use a wooden spoon to mix together the flour, butter and brown sugar in a small bowl until combined into a crumbly mixture. Transfer the mixture to your prepared pan and press firmly into the bottom of the pan. It should reach all edges of the pan and be as even as you can get it. Use your hands or the bottom of a floured spatula.
- Bake the crust for 10-12 minutes or until lightly browned.
- Meanwhile, make the filling. In a separate bowl, use a fork to mix together the eggs, brown sugar, walnuts, coconut, flour and baking powder until well combined.
- Remove the crust from the oven and pour the filling on top, using a spatula to spread evenly.
- Return the pan to the oven and bake for 15-20 minutes or until the filling is golden brown and has crusted over on top. It should not be gooey when you tap it, but it should have a little wobble in the center when you shake the pan.
- Let cool completely before using the foil to lift the bars out of the pan and slicing into squares. Store in a sealed container in the fridge for up to 2 weeks or the freezer for up to 1 month. Thaw before serving.
