White Chocolate Mocha Bars
Ingredients:
- 3/4 cup cold butter, cubed
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 1 tablespoon instant espresso
- 1/4 cup hot water
- 1 teaspoon baking powder
- Pinch of salt
- 1 1/2 cup flour
- 3 ounces melted white chocolate
- 8 ounces cream cheese, room temperature
- 1 1/2 cup powdered sugar
- Chocolate shavings for topping
Instructions:
- Preheat oven to 350 degrees F and line a 9 x 9 square baking pan with parchment paper (grease the pan so the parchment will stick).
- Dissolve the espresso in the hot water and let cool.
- Combine the butter and sugar in the food processor until it starts to stick together.
- Add cooled espresso, egg and vanilla and pulse a few times to combine.
- Add baking powder, salt and flour, pulsing just until combined.
- Spread into the prepared baking dish.
- Bake at 350 degrees F. for 20-25 minutes until edges are browned or a toothpick comes out clean. It should feel dry when you tap it vs. sticky.
- Let the base of the bars cool completely while you prepare the frosting.
- Beat the cream cheese with a mixer until smooth.
- Add white chocolate, mixing until combined and smooth.
- Add powdered sugar, mixing until smooth.
- Spread over cooled base, top with chocolate shavings and cut into bars or squares.
