White Chocolate Mocha Bars

Instructions:

  1. Preheat oven to 350 degrees F and line a 9 x 9 square baking pan with parchment paper (grease the pan so the parchment will stick).
  2. Dissolve the espresso in the hot water and let cool.
  3. Combine the butter and sugar in the food processor until it starts to stick together.
  4. Add cooled espresso, egg and vanilla and pulse a few times to combine.
  5. Add baking powder, salt and flour, pulsing just until combined.
  6. Spread into the prepared baking dish.
  7. Bake at 350 degrees F. for 20-25 minutes until edges are browned or a toothpick comes out clean. It should feel dry when you tap it vs. sticky.
  8. Let the base of the bars cool completely while you prepare the frosting.
  9. Beat the cream cheese with a mixer until smooth.
  10. Add white chocolate, mixing until combined and smooth.
  11. Add powdered sugar, mixing until smooth.
  12. Spread over cooled base, top with chocolate shavings and cut into bars or squares.
