White Chocolate Snickerdoodle Sandwiches
Ingredients:
- Snickerdoodles:
- 1/2 cup butter, softened
- 1/2 cup shortening
- 1 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 3/4 teaspoon salt
- Pinch of nutmeg
- Pinch of ground cloves
- 1/4 cup white sugar
- 1 Tablespoon cinnamon
- White chocolate frosting
- 1/2 cup butter, softened
- 2 1/2 cups powdered sugar
- 1 teaspoon vanilla
- 4 ounces white chocolate, melted (melt in a bowl over a pot of simmering water to avoid burning)
- 1 teaspoon milk
Instructions:
- Preheat oven to 375 degrees F.
- Snickerdoodles:
- Cream together the butter, shortening, brown sugar and white sugar using a spoon or a mixer until smooth.
- Add the eggs and vanilla, mixing until smooth.
- Add the flour, baking powder, baking soda, cream of tartar, salt, nutmeg and cloves, mixing just until combined.
- Combine the remaining sugar and cinnamon in a shallow dish for rolling.
- Roll the dough into 1 1/2 inch balls and roll in the cinnamon sugar before placing on a parchment-lined baking sheet.
- Bake at 375 degrees F. for 9 minutes or until just lightly browned.
- Let cool completely before frosting.
- White chocolate frosting:
- Combine all ingredients in a bowl with a mixer until smooth. Add more milk or powdered sugar to change the consistency.
- Pipe or spoon a large amount of frosting on half of the cookies and top with the remaining cookies to make sandwiches.
