White Chocolate Snickerdoodle Sandwiches

Instructions:

  1. Preheat oven to 375 degrees F.
  2. Snickerdoodles:
  3. Cream together the butter, shortening, brown sugar and white sugar using a spoon or a mixer until smooth.
  4. Add the eggs and vanilla, mixing until smooth.
  5. Add the flour, baking powder, baking soda, cream of tartar, salt, nutmeg and cloves, mixing just until combined.
  6. Combine the remaining sugar and cinnamon in a shallow dish for rolling.
  7. Roll the dough into 1 1/2 inch balls and roll in the cinnamon sugar before placing on a parchment-lined baking sheet.
  8. Bake at 375 degrees F. for 9 minutes or until just lightly browned.
  9. Let cool completely before frosting.
  10. White chocolate frosting:
  11. Combine all ingredients in a bowl with a mixer until smooth. Add more milk or powdered sugar to change the consistency.
  12. Pipe or spoon a large amount of frosting on half of the cookies and top with the remaining cookies to make sandwiches.
